Wet Milling In Beer Brewing



Nowadays, more and more craft brewery occurred. The fist step in beer brewing is milling.
Some people prefer dry crashing, and some may prefer wet milling.
Let’s talk about something about wet milling below.

Advantages:

1. The toughness of husk increased because of the pre impregnation of malt before wet crashing, , so the husk can be maintained intact after milling. In this way, the grain bed could be porous which speeds up the wort filtration and reduces the leaching of harmful components in the husk.
2. It is easy to crash into fine particles because the content of grain is pre absorbent of water, which is conducive to gelatinization of granules, dissolution of free and soluble components of enzymes.

Shortcomings:

1. The requirements for the miller will be high, it will increase the concentrated electricity load. Which may cause large power consumption become large. In addition, the grist can not be stored.
2. The miller needs to be cleaned after each using. It may take a lot of labor and time.
3. If the residence time too long and the sanitation condition of the equipment is poor, the grist will be easy to polluted by bacteria.
