What are the structural characteristics of a whirlpool tun in big breweries?



The whirlpool tun is a vertical cylindrical tank.
Hot wort is pumped in a tangential direction to form a swirling flow. Due to the swirling effect, hot breaks are deposited in the center of the bottom of the trough in a direction of the resultant force of gravity and centripetal force. Clear wort is discharged from wort outlet on side wall.

1. The Whirlpool tun is a flat-bottomed cylindrical vessel with a slope of 1% to 2% at the outlet. There are generally two tangential imports of wort, one at the bottom of the tank and one at a height of 1/3 from the bottom of the tank. In order to increase the swirling speed of the wort in the tank, two inlets are sometimes set at the same height.

2. There are usually 2-3 wort outlets, the upper outlet is 1/2-2/3 of the liquid height, the main outlet is 1/10 of the liquid level, and the lower outlet is at the bottom of the tank.
A check valve is often equipped at the outlet of the wort discharge pipe and the wort pump to prevent backflow of air or wort.

3. The ratio of the height of wort to the diameter (height to diameter ratio) of the whirlpool tank is generally 1 : ( 2 - 3 ).

4. The inner wall of the whirlpool tun should be smooth and clean, and the edges should be flat without corners. Except the spray ring for washing in the upper part of the tank, no accessories should be installed in the tank, such as cooling pipes, escalators, and manhole doors etc.

5. A flat windshield should be installed at the outlet of the whirlp
ool tank. Open it when wort in, after finish, close it in time to reduce the oxidation of wort. When wort out, open it to avoid negative pressure.
