How to chose the suitable brewhouse for your own brewery?

How to chose the suitable brewhouse for your own brewery?

I think the brewery equipment manufacturing is quite different with other products-We need to make it according to each unique brewing intention of every brewmaster-- a most modern design may be adopted by one brewer, but the most traditional design might be also preferred instead by another brewer. We normally do not tell customer which design is best, as the best one is the most suitable one. Another feature of the brewery equipment is that many good ideas come from the practical operating of many brew-lovers, so the developing of the brewery equipment has more reliable and the most extensive mass foundation and power source compared with other areas. This is also one of the reasons why I personally love this industry--creative, with passion, and keep sharing.

Ok, some customers ask us to recommend the most suitable brewhouse, they are normally new with beer brewing or has been used to with home brewing kits. So here are some of my ideas for sharing:

Normal 2-vessel brewhouse: Below 1500L.
A. Mash/lauter combined vessel+ kettle/whirlpool combined vessel
B. Germany style: Mash/kettle combined vessel+lauter vessel. The mash/kettle combined vessel also include the whirlpool function.

Main features:
①Simple equipment, so smaller investment
②Simple piping design, so simple operating.
③The brewhouse total height is smaller, so it is suitable when the ceiling has limitation.

Main cons:
① It is suitable for infusion mashing (increasing the mash temperature via mixing with hot water at different temperatures in A design or via a direct heating in B design.
If you plan to use decoction, then it has limitation and requires more deign modifying.
②It only allows to brew 2 batches per day, and the brewmaster need to work till evening.
3-vessel 2 body brewhouse
A. Mash/lauter/hot liquor combined tank+kettle/whirlpool tank
B. Mash/lauter/whirlpool combined tank+ kettle
C. Lauter/whirlpool combined tank+mash/ kettle vessel
Other customized design such as mash/kettle/whirlpool/hot liquor combined tank+ lauter
Etc.

Main features:
①Saving installation floor area
②For A, since the hot liquor is combined under the mash/lauter tun, so the equipment budget is saved.
③For B,C, The wort can be filtered by natural gravity, at this time, the whirlpool vessel cats as a buffer tank to hold the wort, so the kettle can supply the hot water for flysparging with only one pump.
For C, it mainly takes into account of the request of Germany style mashing.
For B, the hot liquor tank can be even saved, as the kettle will supply hot water for mashing if we operate it flexibly.
Cons:
① The equipment is higher, so the ceiling should be higher.
② Some design can not be realized, for example, for the normal 2-vessel or 3-vessel brewhouse, the hot liquor tank can be double sized or triple sized, but for this design, the hot water tank is mostly the same volume as the brewhouse.

②The pipe assembly is more complex.
3-vessel brewhouse: more used in 1000L-3000L
A. Mash tun+ lauter tun+kettle&whirlpool tun
B. Mash/lauter tun+ kettle vessel+ whirlpool vessel
C. Mash/kettle vessel+ lauter vessel+ whirlpool vessel

Main features:
①Suitable for 2-3 batches per day. For example:
For A,B, the second mash can start in the mash tun while the first batch of wort is at lauter process.
For C, the second batch can start while the first batch of the wort is in whirlpool and wort cooling process.
②A,B are suitable for both infusion and decoction mashing.
Cons:
①Since the extra vessel is added, the budget is more.
② Bigger installation area.
4-vessel brewhouse: more used above 2500L
Mash tun+ lauter tun+ kettle+ whirlpool
Main features:
① Suitable for brewing 3-4 batches per day.
So, when there is expanding request in near future based on the same brewhouse, then the 4-vessel brewhouuse is recommended.
② Suitable for both infusion and decoction mashing.

Cons:
①Since the extra vessel is added, the budget is more.
② Bigger installation area.
The cooking pot Suitable for big volume:
① It can be used as a buffer tank to hold the wort after  lauter. In this case, the wort comes from the first batch and second batch are boiled in the kettle together.
② It can be used as a cooking port for rise/corn etc.
