Generally speaking, the wort should be cooled to fermentation temperature in 30-45minutes by heat exchanger.
It’s very important to equip a suitable heat exchanger for the whole brewery equipment. But how to choose it?

In most breweries, plate heat exchanger is commonly used.
It is always divided into 2 kinds--single stage heat exhchanger and double stage heat exchanger.
But how to choose these two?

For single stage heat exchanger:
Cooled water is commonly used as coolant of this kind of heat exchanger.
In this way, most of the heating energy could be recycled as well as the warmed water.
And if there is unknown leakage on heat exchanger during long time using, the beer is just be diluted but not be polluted. You need a cold liquor tank for cold water supply.

For double stage heat exchanger:

Usually city water is used for first stage cooling and glycol water is used for second stage cooling.
In this way, much of the heat energy is wasted. Also the warmed glycol water will warm fermenters and brite tanks when it circulates.
What’s more, similarity, if there is unknown leakage on heat exchanger, beer will be polluted by glycol water.
