The mashing system is the most important component of brewery equipment. Most of the mashing systems in large breweries include pasting pots, mash tun, lauter tun, boil kettle,whirlpool tun, while commercial beer equipment is usually configured with two to three saccharification vessels, some of which have multiple functions.
Two vessel mashing system
Advantages:
1) Simple equipment and small investment.
2) Simple piping and easy operation.
3) Low height of the equipment and low requirements for site height.
Disadvantages:
1) Wort filtration is only possible by extraction, which is relatively slow and demanding on the brewer.
2) The stirrer may affect the spin-sinking effect.
3) Washing water can only be prepared in advance and stored in a large basin, bucket or fermenter, which is troublesome to operate and has high heat loss.
4) Usually only a maximum of two batches can be brewed in a day and it requires the brewer to stay late at night and work overtime.
Three vessel mashing system
Advantages:
(1) Usually 2 batches can be brewed in one daytime, if you stay up late and work overtime, you can brew 3 to 4 batches a day, which allows you to brew more in the shortest possible time during peak beer sales.
(2) The height of the equipment is relatively short.
Disadvantages:
(1) Filtration can only be carried out by extraction.
(2) The equipment has a large footprint.
Two-tank, three-vessel mashing system
Advantages:
(1) The stirring and ploughing knife reducer and ploughing knife are upgraded to horizontal, which makes the equipment more stable in operation.
(2) The heating area of the mashing/boiling kettle is very large and the temperature rise is fast.
(3) The high position of the filter tank allows for natural filtration, fast filtration, high wort clarity.
(4) The separation of hop lees and hot solids is better.
(5) When filtering the wort, the mashing/boiling kettle can be used to prepare the wash water and the lees can be washed at the same time as filtering, which shortens the mashing time by 30 to 50 minutes.
(6) Generally 2 batches can be brewed in one daytime, and if you stay up late and work overtime, you can brew 3 to 4 batches a day, allowing more to be brewed in the shortest possible time during peak beer sales.
Disadvantages:
(1) Equipment is generally slightly higher than traditional two-vessel mashing system.
(2) Investment in equipment is higher than traditional two-vessel mashing system.
Large-scale three and four vessels mashing system
This type of equipment generally has a volume of 1,000L and above, usually with the addition of auxiliary equipment such as screw conveyors, wort balancing tanks and hop filter tanks.
Advantages:
(1) There are separate tanks for saccharification, filtration, boiling and spin-sinking, which, together with the hot water tank, can significantly reduce the time taken up by the pot, and the total time for saccharification is generally shortened by 30-60 minutes.
(2) The use of new heating jackets in the mashing/filtering and boiling/whirlpooling tanks significantly reduces the mashing heating time and the boiling intensity up to 8-10%, which facilitates protein denaturation and coagulation and reduces the content of undesirable flavouring substances.
(3) With the use of a screw conveyor, the transfer of malt powder is made easy.
(4) The addition of a wort balancing tank allows for natural wort filtration.
Disadvantages:
Equipment of this output is generally factory equipment, where the customer will be directly in front of the Food and Drug Administration and therefore has higher requirements for the processing of the equipment.
