What yeasts can be used in craft brewery brewing?


Nowadays, craft beer is becoming more and more popular. We all know that the brewing materials of craft beer are water, malt, hops, and yeast. So how many types of brewer's yeast do you know? Now let me introduce some brewer's yeast to you.
1. M27 Belgian High Alcohol Ale Yeast
Type: ale yeast
Style: Belgian style
Final Settling: Moderate
Fermentation temperature: 18-32 degrees.
Recommended temperature: 26-32 degrees
M27 is a highly fermented Belgian ale yeast. Fermentation temperature is high, with spicy, fruity, peppery taste characteristics. With an alcohol content of up to 14%, it is a typical Belgian seasonal yeast.
2. [W34/70 yeast] Fermentis lager yeast
Type: Lager yeast
Style: German / wheat flavor
Final Settling: High
Fermentation temperature: 9-22 degrees.
Suitable temperature: 12-15 degrees
The world's most famous yeast strain comes from Weihenstephan, Germany's Weissen Brewery (the oldest brewery in the world founded in 1040). Due to its good fermentation characteristics and clean wheat aroma, it is widely used by the majority of beer groups. In addition, due to the high fermentation temperature, it is also very suitable for homebrewing.

CBC-1 is a high-alcohol, high-pressure-tolerant yeast designed for fermentation in bottles and barrels, resulting in a compact yeast slush. The yeast itself has no obvious flavor and has little effect on the wine body. It can also be used in the main fermentation to directly brew high-alcohol beer or champagne-style beer, fruit beer.
4. [M02 Cider Wine Yeast]
Type: Cider Yeast
Style: Irish style
Final Settling: High
Fermentation temperature: 12-28 degrees.
Suitable temperature: 12-20 degrees
M02 is a highly recommended cider yeast for brewing all kinds of fruit sparkling wines. Fruity aromas and a crisp body. The fermentation degree is very high, the sedimentation is very high, and the tolerance to sulfur dioxide is high. The finished fruit juice can be used for direct fermentation, and it is recommended to use it with yeast nutrients.
When brewing fruit juice fermented beverages, due to the single nutrients in fruit juice and the lack of necessary elements such as nitrogen, it is generally recommended to use a yeast nutrition meter to assist fermentation.
5. [BRY97 American West Coast Brewer's Yeast]
Type: ale yeast
Style: American
Final Settling: Good
Fermentation temperature: 12-25 degrees.
Suitable temperature: 17-21 degrees.
BRY-97 is an American West Coast style ale yeast from the SIEBEL Institute and is widely used in commercial breweries to produce different styles of beer. The main fermentation is completed in 4 days at 17 degrees. The taste is clean and balanced. Suitable for brewing American style beer.
6. [US05 original yeast]
Type: ale yeast
Style: American cool
Final Settling: Medium
Fermentation temperature: 12-25 degrees.
Suitable temperature: 15-22 degrees.
US05 is an American-style yeast with very low production of diacetyl and has a very good balance. The brewed beer tastes clean and refreshing, and the yeast settles in general. Great for brewing American Ales, American IPAs.
7. [Windsor original yeast]
Type: ale yeast
Style: British Fruity
Final Settling: High
Fermentation temperature: 15-25 degrees.
Suitable temperature: 18-21 degrees.
Windsor is a yeast that produces full-bodied, fruity aromas. The yeast has this very good sedimentation, and the residual sugar is relatively high, which is a typical British yeast. The recommended fermentation temperature is 18-21 degrees, and the first hair time is 3-5 days. Great for brewing English bitters, ESBs and more.
