Open fermentation of beer is a traditional fermentation method mainly used to produce beer with certain specific flavors. This method usually involves not closing the fermentation period, allowing yeast to naturally enter, so that the beer can ferment. This fermentation method is similar to the production process of Belgian lambic beer, in which ingredients such as lactic acid bacteria, coriander seeds and salt are added to produce specific flavors. The history of this fermentation method can be traced back to the late 18th century, when Leipzig was full of Koss taverns, and the earliest Koss beers were made using this natural fermentation method. The characteristic of this method is its open fermentation process, which allows yeast and other microorganisms in the air to enter naturally, thus affecting the flavor of the final beer. However, this method is difficult to control because it is impossible to accurately control the type and amount of yeast that is introduced, which may cause the flavor of the beer to fluctuate greatly. In addition, due to the presence of wild bacteria, this beer usually has a distinct sour and spice-like phenolic taste, and sometimes has a slightly salty taste due to the influence of local water quality. ‌Despite this,‌ this traditional method is still used by some brewers to make beer with a specific flavor.

Of course, if you have visited some larger commercial old breweries, you may find some open beer fermentation tanks in some sterile beer fermentation rooms. These fermentation tanks are used for the main fermentation of beer. The yeast "bathing" in the tank will reproduce and work very happily, so that the sugar eaten by them will also be converted into more "pleasant" alcohol and various flavor substances. Of course, after these beers are fermented to a certain extent (when the sugar content of the fermentation liquid drops to about 4 plato), they will be transferred to the brite tank for secondary fermentation, maturation and carbonization.

And our open fermentation tanks here are also designed for these ancient beer fermentations. These tanks are made of stainless steel 304 or stainless steel 316, with flat tops and flat bottoms (with a slight slope towards the discharge outlet), and are equipped with dimple glycol cooling jackets to stabilize the fermentation temperature.
