How To Choose Heat Exchanger For My Brewery Equipment?

Wort cooling is one of the most important step in the whole beer brewing process. Now the wort is cooled to fermentation temperature for survive of the yeast. So heat exchanger is one of the most important part in your beer brewery equipment.

I. Heat exchanger type 
 
There are single stage and two stage heat exchanger being popularly used in micro breweries.  It is easy to recognize which type you need, just confirm if you have cold water tank/cold water or not on site. If with cold water tank, most possibility you should use a single stage model.
 
II. Heat exchanger backplate
 
There are usually two kinds of backplate being used, the carbon steel backplate & stainless steel backplate, but which one is better?
 
The plate heat exchanger is mainly composed of difference amount of stainless steel plates with corrugated shapes. It is the place of energy exchange between the coolant and hot wort. All of the stainless steel plate are pressed together under huge power, which with two backplate outside of them.
 
There are some of suppliers who manufacture the plate heat exchanger totally with stainless steel, even including the backplate. It seems a whole stainless steel device is more sanitary for beer brewing, but it is not reasonable design actually.
 
We all know the hardness of carbon steel is much better than stainless steel. All of the inside plates are pressed together with the backplate, so the backplate is easily out of shape under the huge pressure if it without enough hardness. Then there will be gap between the inside plates or between the inside plate and backplate. The result is serious, it may pollute your whole batch of beer.
