How to avoid the mash oxidation

During mashing process, the existence of oxygen is easy to cause mash oxidation, which will make beer color become darker, poor stability of flavor, reduce the decomposition of starch.
So we must take effective measures to solve these problems.
The main reasons that cause mash oxidation are as below:
1) Fill mash into tank from the top of mash tun
2) The agitator rotating speed is too fast.
3) Transfer mash by pump.

There are some effective ways to avoid oxidation:
1) Install hydrator on the top of mash tun, the sprayed water will mix evenly with milled malt in the hydrator.
2) Fill mash into tanks from the bottom.
3) Match with agitator with VFD control system. VFD control system can control agitator rotating speed as brewer requirement easily.
4) Avoid cavitation phenomenon.
5) Add nitrogen protective device to isolate oxygen to avoid oxidization of mash.
