Infusion Mashing
1. The equipment is relatively simple, with a saccharine pan for operation.
2. Simple operation, short working times and low production costs.
3. Less equipment, smaller footprint and smaller investment.
4. Poor quality malt should not be used and auxiliaries may be used.
5. The raw material utilisation rate is over 95%.
6. The wort has more sugar and less medium molecule production of protein and dextrin.
7. Suitable for brewing top-fermented beers and bottom-fermented beers with a soft, light and refreshing beer.
Decoction Mashing
1. The equipment is complex and must have more than two saccharification units, with at least 1 saccharification pot and 1 boiling pot.
2. Complex operation, long working hours and high production costs.
3. More equipment, larger footprint and higher investment.
4. It is possible to use poorer quality malt and be able to use auxiliaries.
5. The raw material utilisation rate is above 98%.
6. The resulting wort has a reasonable composition, with easy control of sugars and non-sugars and a high number of medium molecular products of protein and dextrin.
7. Commonly used in the production of the following fermented beers, both pale and full-coloured beers can be brewed, the beer is full-bodied and kills the mouth.
