The principle of wort reaching the conical fermenter



Due to huge volume of fermenter, usually several batches of wort can full a fermenter.
So we transfer wort to fermenter one by one.
But the time of fulling tank usually should be less than 20h.
 
After wort entering the fermenter tank, yeast start to breed, producing heat. And the temperature of tank increase. So the cooling temperature need to meet the principle of from low to high, and then to temperature of fulling tank.Usually the temperature of fulling tank should be lower than primary fermentation around 2℃。
Lower temperature of the fulling tank will expand the time to naturally increase temperature and slower the speed of yeast breeding. So it will hinder the fast fermenting. At same time, it will gain beer in low fermentation degree.
On the contrary, higher temperature of fulling tank will speed up breed of yeast in earlier stage.
The overquick decreasing of sweet will result in the lower metabolism function due to lack of nutrition.So it will affect the restore of diacetyl. At the same time, it will hinder producation and saturation of co2 so that damaging the taste of beer and the property of foam.
