The sedimentation of yeast




In the process of fermenting, the yeast will gradually fall to the bottom of fermentation tank. And it can be divided to 3 section.
 
The third tier of the yeast(the bottom tier) is weak cell and dead cell. They are made up by particle fell firstly. Such as hop resin, concretion particle etc.. And as there are so much impurity in the bottom tier, they are usually used to fodder or leaved unused.
 
The middle tier is core yeast. They contain the robust yeast cell and the yeast cell who has strong ability to breath. The color is shallow. And the percent of middle tier are 65%~70% of total yeast cell. So they should be gathered and used in next time.
 
The first tier yeast is light yeast. It is usually made up by fell bubbling cup and last fell yeast. And they contain the educt of protein and hop resin and other impurity. After separating, they can be used to fodder and other comprehensive usage.
