Generally it start the clock when the wort temperature reached 100℃.Of course the total boiling time should depends on the beer type, brewing technical etc. Usually the boiling time at about 70-90min.

There are three mainly process for boiling: Preheating, primary boiling and boiling.

1.Preheating
It generally start when the lautered wort submerged the heating device, now the steam at smaller flows. We all know the wort temperature will be slowly decreased during lautering, if we start heating after the lautering completely finished, it will takes longer time before boiling. So the preheating will help to insulated or slowly increase the temperature.

2.Primary boiling
Just mean the wort just come to the boil and the primary boiling not exceed 30min. Now the steam valve is not totally opened and the wort lautering is still going on. This stage is get ready for evaporation. The evaporation could be started once the sparging is over.

3.Boiling
Now the steam valve is totally opened and the wort keep boiling. The boiling quality mostly was judged by the boiling intensity. Generally the boiling intensity between 8-12%. There is also one estimated method during the actual beer brewing, for 1000L wort, the evaporation better at 1.1-1.4l/min.
