Why do we add hops when making beer?
1. Gives beer its bitterness and aroma.
2. Increase the bubbly of beer.
3. Increases the preservative power of wort and beer.
4. Hops and wort are boiled together to promote protein coagulation and precipitation, which is beneficial to wort clarification and abiotic stability of beer.
Composition of hops
1. Hop resin
The α-acid in hop resin is the main source of bitterness in beer.
2. Hop oil
Hops contain about 0.5%-2% hop oil. Hop oil is highly volatile, and about 90% will volatilize during the boiling, cooling and fermentation of wort.
3. Polyphenols
When the wort is boiled, the polyphenols have the effect of precipitating proteins, which is beneficial to the clarification of the wort, and to the non-biological uncertainty and fullness of the beer.
Preservation methods of hops
1. Low temperature, dry, dark.
2. Tightly packaged, vacuumed to remove air and oxygen.
3. Usually stored at 0~2°C.
4. Do not store with other odorous substances.
