The characteristics of dry beer are described as:

(1) The malt which will be used for dry beer should with high fermentable and dissolution (72% to 80%), low nitrogen, thin husk and light color.

(2) Low salinity brewing water. The K-hardness should be 0.71 mmol/L or less, the pH should be 6.2 to 6.5, and CaCl2 should be appropriately added to improve the activity of the amylase.

(3) Fresh hops. hard resin/soft resin <5.0%.

(4) Use more non-germinated grains or sugars such as rice, defatted corn, starch, sugar and syrup. The feed should be 35%~50% of the total feed. The ideal ratio of grist to water is usually 1: (4~5).

(5) Appropriate enzyme should be added. (high temperature alpha amylase, glucoamylase, isoamylase, protease, etc.).

(6) When making wort, reduce the mixing time of husk and mash as much as possible;
increase the extracting efficient of fermentable sugar, the fermentation degree of wort should be 70%~75%; Shorten the time for boiling.

(7) Use Low-generation, high-fermentable powdered or low-cohesive yeast. For yeast sludge, it should be added in an amount of about 0.8% to 1.0%.

(8) Add more amount of yeast.

(9)Reduce the dissolved oxygen and bottleneck air in the bottle as much as possible.

(10) If dry beer is added with protease, silica gel, PVPP or antioxidant during second fermentation stage, it needs to be pasteurized after filling.

(11) Dry beer should be delivered to consumers as soon as possible
