Why we use heat exchanger for brewery system?

The brewmaster usually consider many factors in the actural process of beer brewing.
Maybe you will ask” what is the function of heat exchanger? What is the working process?”
 
Whether you choose cold water or cole water combined glycol water, the chillers are used to cool glycol water in glycol water tank only,
heat exchanger can coll wort because cold water and wort will exchange heating with each other.
 
If two-stage heat exchanger, the process will be: Glycol water from the glycol water tank cools two parts: the first part is to cool the wort via heat exchanger,  
the other part is to cool the fermenter and bright beer tank.
 
If single stage heat exchanger, the process will be: Glycol water from the glycol water cools one part: fermenter and bright beer tank,
then the wort will be cooled directly by the cold water through the single stage heat exchanger.
 
Now there are 2 kinds of heat exchanger, two stage and single stage. Two stage is very common but consider of energy saving and sanitary, the single-style is more and more popular now.
For two stage heat exchanger, the first stage is cold water, the second stage is glycol water.
For single stage heat exchanger, it just cold water. So it will be more sanitary and safe for wort.
Also heat utilization rate obviously increased, and it is easy to control and operate.
