What temperature is caustic wash for beer fermenters?

One question from our client:

Hi Damon,

We successfully unloaded the fermenters in our brewery! We'll be washing and preparing them this week.

I want to check with you how much hot water is allowed to wash them? We want to do it with 80 C caustic soda for first wash but want to double check with you first.

Answer from us:

Glad to know you finally received the new fermenters!

It's possible to use 80 C caustic liquid or hot water to wash the internal of the fermenters, the higher the temperature, the better the decontamination effect will be.
But usually we don't suggest to use so high temperature liquid to wash tank, since if the tank is closed(we mean all valves of the tank are closed), once the temperature inside the tank has dropped significantly, then the high-temperature air in the tank will shrink, and a small oversight may lead to serious deformation of the tank.

For fermentation tanks, negative pressure is the cruelest killer.

So if you want to use 80C caustic liquid to clean the tank, please make sure there is valves open on the cleaned tank. Or you can use slight lower temperature caustic liquid, for example 45-55C.
